500 grams mixed vegetables (carrots, bell peppers, cauliflower, peas), diced
1 large onion, thinly sliced
2 tomatoes, chopped
130 grams tomato puree
1 green chili, finely chopped
15 grams ginger garlic paste
6 grams cumin seeds
6 grams coriander powder
5 grams turmeric powder
5 grams red chili powder (adjust to taste)
6 grams garam masala
15 grams Salt
30 gramss vegetable oil
Fresh coriander leaves for garnish
**Instructions:**
1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add sliced onions and sauté until they become golden brown.
3. Add ginger garlic paste and chopped green chili. Sauté for a minute until the raw smell disappears.
4. Add chopped tomatoes and cook until they become soft.
5. Add tomato puree, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a few minutes until the oil starts to separate from the masala.
6. Add the diced mixed vegetables and cook for about 810 minutes or until they are cooked but still retain some crunch.
7. Sprinkle garam masala and mix everything well.
8. Cook for an additional 2-3 minutes. Adjust salt and spice levels according to your taste.
9. Garnish with fresh coriander leaves.
10. Serve hot with roti, naan, or rice.
