15 grams soy sauce
15 grams vegetable oil
15 grams garlic, minced
15 grams ginger, grated
130 grams spring onions, chopped
Salt and pepper to taste
Fresh coriander leaves for garnish
**Instructions:**
1. Heat vegetable oil in a wok or a large pan over medium-high heat.
2. Add minced garlic and grated ginger. Sauté for a minute until fragrant.
3. Add the chopped mixed vegetables to the wok. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
4. Push the vegetables to one side of the wok, creating a space in the center. Pour a little more oil if needed.
5. Add Schezwan sauce to the center of the wok. Stir and cook for a minute until it's aromatic.
6. Mix the Schezwan sauce with the vegetables in the wok.
7. Add soy sauce, salt, and pepper to the wok. Stir well to combine.
8. Add the cooked basmati rice to the wok. Use a spatula to gently fold the rice into the vegetables and sauce, ensuring that the rice is well-coated.
9. Stir-fry for another 3-4 minutes until everything is heated through and well-mixed.
10. Add chopped spring onions and toss the fried rice once more.
11. Garnish with fresh coriander leaves.
