500 grams cooked basmati rice (preferably cooled and day-old)
250 grams mixed vegetables (carrots, peas, corn, bell peppers), finely chopped
130 grams spring onions, finely chopped
70 grams beans, finely chopped
70 grams cabbage, finely chopped
3-4 cloves garlic, minced
1 small onion, finely chopped
70 grams soy sauce
15 grams vinegar
6 grams chili sauce (adjust to taste)
15 grams Salt
30 ml refined oil (vegetable or sesame oil)
Freshly ground black pepper to taste
2 eggs (optional)
Spring onion greens for garnish
**Instructions:**
1. **Preparation:**
Make sure all vegetables are finely chopped.
If using day-old rice, break up any clumps.
2. **Stir-frying:**
