For Crispy Noodles:
250 grams boiled noodles
Oil for deep frying
For Chopsuey Sauce:
30 ml refined oil
15 grams finely chopped garlic
15 grams finely chopped ginger
250 grams mixed vegetables (carrots, bell peppers, cabbage, beans), julienned
250 grams cabbage, finely shredded
250 grams mushrooms, sliced
250 grams bean sprouts
30 gramss soy sauce
15 grams vinegar
15 grams tomato ketchup
15 grams chili sauce (adjust to taste)
Salt and pepper to taste
15 grams cornstarch mixed with 30 gramss water (for thickening)
For Garnish:
Spring onions, chopped
**Instructions:**
**Crispy Noodles:**
1. Boil the noodles according to package instructions.
2. Heat oil for deep frying. Fry the boiled noodles until golden and crispy. Remove and drain on paper towels.
**Chopsuey Sauce:**
1. Heat oil in a wok or large pan over medium-high heat.
2. Add chopped garlic and ginger. Sauté for a minute until aromatic.
3. Add julienned mixed vegetables, shredded cabbage, sliced mushrooms, and bean sprouts. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still have a crunch.
4. In a small bowl, mix soy sauce, vinegar, tomato ketchup, chili sauce, salt, and pepper.
5. Pour the sauce mixture into the wok and toss the vegetables to coat evenly.
