Veg Biryani (Reg) & 1 Portion Paneer 65 & 750 Ml Cold Drink
:** For Veg Biryani: 250 grams basmati rice 250 grams mixed vegetables (carrots, peas, beans, etc.), chopped 1 large onion, thinly sliced 2 tomatoes, chopped 125 grams curd (Dahi) 70 grams mint leaves, chopped 70 grams coriander leaves, chopped 30 gramss biryani masala 6 grams ginger garlic paste 5 grams turmeric powder 5 grams red chili powder Whole spices (bay leaf, cardamom, cinnamon, cloves) Ghee or oil for cooking 15 grams Salt For Raita (Side Dish): 250 grams curd (Dahi) 1/2 cucumber, finely chopped 1 medium-sized tomato, finely chopped 70 grams red onion, finely chopped 70 grams mint leaves, chopped Salt and cumin powder to taste For Salad: Mixed greens (lettuce, spinach, arugula, etc.) Cherry tomatoes, halved Cucumber slices Olive oil and lemon dressing For Dessert: Kheer (Rice Pudding) or Gulab Jamun **Instructions:** Veg Biryani: 1. Rinse the basmati rice and soak it in water for 30 minutes. Drain the water. 2. In a large pot, heat ghee or oil. Add the whole spices and sauté until aromatic. 3. Add sliced onions and sauté until golden brown. Add ginger garlic paste and cook until the raw smell disappears. 4. Add chopped tomatoes, biryani masala, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft. 5. Add mixed vegetables, Curd (Dahi), mint leaves, and coriander leaves. Mix well. 6. Add soaked and drained rice. Stir gently to coat the rice with the spices. 7. Add water (use the 1:2 ratio of rice to water). Bring it to a boil, then reduce the heat, cover, and simmer until the rice is cooked and the water is absorbed. 8. Once done, let it rest for a few minutes, then fluff the rice with a fork. Raita: 1. In a bowl, mix Curd (Dahi), chopped cucumber, tomato, red onion, mint leaves, salt, and cumin powder. 2. Refrigerate until serving. Salad: 1. Toss mixed greens, cherry tomatoes, and cucumber slices in a bowl. 2. Drizzle with olive oil and lemon dressing. Dessert: 1. Serve kheer or gulab jamun as a sweet ending to the meal. **Assembly:** 1. Plate the Veg Biryani, add a side of raita, and garnish with chopped coriander leaves. 2. Serve the salad on the side. 3. End the meal with a portion of kheer or gulab jamun. Enjoy your Veg Biryani Combo!
