: Basmati rice Mixed vegetables (carrots, peas, beans, etc.) Onions Tomatoes ginger garlic paste Biryani masala Ghee Fresh coriander and mint leaves Whole spices (bay leaf, cardamom, cinnamon, cloves) Red chili powder Turmeric powder 15 grams Salt Instructions: 1. **Parboil Rice:** Parboil basmati rice with whole spices until 70% cooked. Drain and set aside. 2. **Prepare Vegetables:** Sauté mixed vegetables with onions, tomatoes, ginger garlic paste, and spices. 3. **Layering Biryani:** In a heavy-bottomed pot, layer cooked vegetables, partially cooked rice, and chopped mint and coriander leaves. Repeat the layers. 4. **Final Cooking:** Drizzle ghee over the layers. Cover the pot and cook on low heat until the rice and vegetables are fully cooked. Paneer Butter Masala: Ingredients: Paneer cubes Onions Tomatoes Cashews Butter Fresh cream ginger garlic paste Red chili powder Garam masala Kasuri methi (dried fenugreek leaves) 15 grams Salt Instructions: 1. **Prepare Gravy:** Sauté finely chopped onions, tomatoes, and cashews. Blend into a smooth paste. 2. **Cook Paneer:** In a pan, cook paneer cubes until they are golden brown. 3. **Make Masala:** In another pan, melt butter and add ginger garlic paste. Add the blended paste, red chili powder, garam masala, and kasuri methi. Cook until the masala is well-cooked. 4. **Add Paneer:** Add the cooked paneer to the masala. Pour fresh cream and mix well. Raita: Ingredients: Curd (Dahi) Cucumber Mint leaves Cumin powder Salt Instructions: 1. **Prepare Raita:** Grate cucumber and chop mint leaves. Mix them with Curd (Dahi). 2. **Season:** Add cumin powder and salt. Mix well. Vegetable Kebabs: Ingredients: Assorted vegetables (bell peppers, zucchini, mushrooms, etc.) Curd (Dahi) Gram flour (besan) ginger garlic paste Red chili powder Garam masala Lemon juice Salt Skewers Instructions: 1. **Prepare Marinade:** Mix Curd (Dahi), gram flour, ginger garlic paste, red chili powder, garam masala, lemon juice, and salt to form a thick marinade. 2. **Marinate Vegetables:** Coat the assorted vegetables with the marinade and let them marinate for a few hours. 3. **Skewer and Grill:** Skewer the marinated vegetables and grill until they are fully cooked and have a nice char. Salad: Ingredients: Cucumber Tomatoes Lettuce Olive oil Lemon juice Salt and pepper Instructions: 1. **Assemble Salad:** Slice cucumber and tomatoes.
