: Basmati rice Chicken pieces Onions Tomatoes ginger garlic paste Biryani masala Ghee Fresh coriander and mint leaves Curd (Dahi) Whole spices (bay leaf, cardamom, cinnamon, cloves) Red chili powder Turmeric powder 15 grams Salt Instructions: 1. **Marinate Chicken:** Marinate chicken with Curd (Dahi), ginger garlic paste, biryani masala, red chili powder, and salt. Let it marinate for at least 1 hour. 2. **Prepare Rice:** Parboil basmati rice with whole spices until 70% cooked. Drain and set aside. 3. **Layering Biryani:** In a heavy-bottomed pot, layer marinated chicken, partially cooked rice, and chopped mint and coriander leaves. Repeat the layers. 4. **Final Cooking:** Drizzle ghee over the layers. Cover the pot and cook on low heat until the rice and chicken are fully cooked. Chicken Curry: Ingredients: Chicken pieces Onions Tomatoes ginger garlic paste Red chili powder Turmeric powder Garam masala Coriander powder Fresh coriander leaves Oil 15 grams Salt Instructions: 1. **Saute Onions:** In a pan, sauté finely chopped onions until golden brown. 2. **Add Spices:** Add ginger garlic paste, red chili powder, turmeric powder, garam masala, and coriander powder. Cook until the raw smell disappears. 3. **Add Chicken:** Add chicken pieces and cook until they are browned. 4. **Simmer:** Add chopped tomatoes and let it simmer until the chicken is cooked through. Raita: Ingredients: Curd (Dahi) Cucumber Mint leaves Cumin powder Salt Instructions: 1. **Prepare Raita:** Grate cucumber and chop mint leaves. Mix them with Curd (Dahi). 2. **Season:** Add cumin powder and salt. Mix well. Chicken Kebabs: Ingredients: Chicken pieces Curd (Dahi) ginger garlic paste Red chili powder Garam masala Lemon juice Salt Skewers Instructions: 1. **Marinate Chicken:** Marinate chicken with Curd (Dahi), ginger garlic paste, red chili powder, garam masala, lemon juice, and salt. Let it marinate for a few hours. 2. **Skewer and Grill:** Skewer the marinated chicken pieces and grill until they are fully cooked and have a nice char. Salad: Ingredients: Cucumber Tomatoes Lettuce Olive oil Lemon juice Salt and pepper Instructions: 1. **Assemble Salad:** Slice cucumber and tomatoes. Toss them with lettuce. 2. **Dress:** Drizzle olive oil and lemon juice over the salad. Season with salt and pepper. Naan or Roti: You can either make naan or roti at home or buy them from a store. Dessert (Optional): Choose a dessert of your choice, such as Gulab Jamun or Kheer. Serving: Arrange the dishes on a thali or a large platter.
