Clay Oven Roasted Soya Cubes Tossed In Masala Gravy
: For Soya Tikka: 250 grams soya chunks 130 grams hung curd 15 grams ginger garlic paste 15 grams gram flour (besan) 10 grams red chili powder 10 grams turmeric powder 6 grams garam masala 15 grams Salt 30 gramss vegetable oil For Masala Gravy: 30 gramss vegetable oil 1 large onion, finely chopped 2 large tomatoes, pureed 15 grams ginger garlic paste 6 grams cumin powder 6 grams coriander powder 5 grams red chili powder (adjust to taste) 5 grams turmeric powder 6 grams garam masala 15 grams Salt 130 grams heavy cream Fresh coriander leaves for garnish Instructions: **For Soya Tikka:** 1. **Prepare Soya Chunks:** Boil the soya chunks in water for 5-7 minutes until they become soft. Drain and squeeze out excess water. 2. **Marinate Soya Chunks:** In a bowl, mix Curd (Dahi), ginger garlic paste, gram flour, red chili powder, turmeric powder, garam masala, salt, and vegetable oil. Add the boiled and squeezed soya chunks to the marinade. Coat them well and let it marinate for at least 1 hour. 3. **Grill Soya Tikka:** Preheat the oven or grill. Skewer the marinated soya chunks and grill until they get a nice char on the surface. You can also use a stovetop grill pan. **For Masala Gravy:** 1. **Prepare Masala Base:** Heat vegetable oil in a pan. Add chopped onions and sauté until golden brown. Add ginger garlic paste and sauté for another 12 minutes until the raw smell disappears. 2. **Add Spices:** Add cumin powder, coriander powder, red chili powder, turmeric powder, and garam masala. Cook the spices for 2-3 minutes. 3. **Add Tomato Puree:** Pour in the pureed tomatoes. Cook until the oil starts to separate from the masala. 4. **Add Cream:** Add heavy cream and salt. Stir well and cook for another 2-3 minutes. 5. **Combine Soya Tikka:** Add the grilled soya chunks to the masala gravy. Mix well and let it simmer for 5-7 minutes. 6. **Garnish and Serve:** Garnish with fresh coriander leaves. Serve the Soya Tikka Masala hot with rice or naan.
