500 grams mutton, cut into pieces
2 large onions, finely sliced
2 tomatoes, pureed
125 grams curd (Dahi)
30 gramss ginger garlic paste
70 grams oil or ghee
6 grams cumin seeds
4-5 green cardamom pods
4-5 cloves
2-inch cinnamon stick
2-3 black cardamom pods
10 grams turmeric powder
2 teaspoons red chili powder
10 grams coriander powder
6 grams fennel powder
15 grams Salt
Fresh coriander leaves for garnish
Instructions:
1. **Marinate the Mutton:**
In a bowl, mix mutton with Curd (Dahi), ginger garlic paste, turmeric powder, red chili powder, coriander powder, and salt. Let it marinate for at least 2 hours.
2. **Cooking the Rogan Josh:**
Heat oil or ghee in a heavy-bottomed pan. Add cumin seeds, green cardamom, black cardamom, cloves, and cinnamon. Sauté until they release their aroma.
3. **Add Sliced Onions:**
Add finely sliced onions and sauté until golden brown.
4. **Add Pureed Tomatoes:**
Add pureed tomatoes to the pan and cook until the oil separates.
5. **Add Marinated Mutton:**
Add the marinated mutton to the masala and cook until the mutton is well browned.
6. **Simmer and Cook:**
Add a cup of water, cover the pan, and simmer until the mutton is tender and cooked through. Stir occasionally.
7. **Adjust Seasoning:**
Adjust salt and spices according to your taste.
8. **Garnish and Serve:**
Garnish with fresh coriander leaves. Serve hot with naan or steamed rice.
