**For Marination:**
500 grams mutton, preferably on the bone
250 grams hung curd
10 grams red chili powder
10 grams turmeric powder
15 grams Salt
15 grams ginger garlic paste
**For Lal Maans Masala:**
4 tablespoons mustard oil
2 large onions, finely chopped
2 tomatoes, pureed
10 grams coriander powder
10 grams red chili powder (adjust to taste)
10 grams turmeric powder
15 grams kachri powder (optional)
15 grams garlic paste
15 grams ginger paste
2-3 dried red chilies
6 grams cumin seeds
2-3 green cardamom pods
12 black cardamom pods
2-3 cloves
1-inch cinnamon stick
15 grams Salt
Fresh coriander leaves for garnish
Instructions:
1. **Marinate the Mutton:**
In a bowl, mix mutton with Curd (Dahi), red chili powder, turmeric powder, salt, and ginger garlic paste. Allow it to marinate for at least 2 hours or overnight in the refrigerator.
2. **Prepare Lal Maans Masala:**
Heat mustard oil in a heavy-bottomed pan. Once hot, add cumin seeds, dried red chilies, green cardamom pods, black cardamom pods, cloves, and cinnamon stick. Allow them to splutter and release their aroma.
3. **Add Onions:**
Add finely chopped onions and sauté until they turn golden brown.
4. **Add ginger garlic Paste:**
Add ginger garlic paste and sauté for a couple of minutes until the raw smell disappears.
5. **Add Tomatoes:**
Add pureed tomatoes and cook until the oil starts to separate from the masala.
6. **Add Spices:**
Add coriander powder, red chili powder, turmeric powder, and kachri powder. Mix well and cook for a few minutes.
7. **Cook Mutton:**
Add the marinated mutton to the masala and cook on high heat until the mutton is browned.
8. **Pressure Cook or Slow Cook:**
You can transfer the mixture to a pressure cooker and cook until the mutton is tender, or you can continue to cook on low heat in the same pan, covered, until the mutton is cooked and the flavors are well absorbed.
9. **Adjust Seasoning:**
Adjust salt and spice levels according to your taste.
10. **Garnish and Serve:**
Garnish with fresh coriander leaves and serve hot with steamed rice or Indian bread.
