**For Peri Peri Sauce:**
1012 African bird's eye chili peppers (adjust to taste)
3 cloves garlic
6 grams smoked paprika
6 grams dried oregano
6 grams ground cumin
6 grams brown sugar
130 grams olive oil
Juice of 1 lemon
15 grams Salt
**For Chicken:**
1 whole chicken, cut into pieces or chicken thighs/drumsticks
Salt and pepper to season
Olive oil for brushing
Instructions:
**For Peri Peri Sauce:**
1. In a blender, combine African bird's eye chili peppers, garlic, smoked paprika, dried oregano, ground cumin, brown sugar, olive oil, lemon juice, and salt.
2. Blend until you get a smooth sauce. Adjust salt and spice levels according to your preference.
**For Chicken:**
1. Preheat your oven to 200°C (392°F).
2. Season the chicken pieces with salt and pepper.
3. Place the chicken in a large bowl and coat it with the prepared peri-peri sauce. Ensure that the chicken is well coated.
4. Marinate the chicken for at least 30 minutes or overnight in the refrigerator for better flavor.
5. Heat a grill or grill pan over medium-high heat.
6. Brush the grill with olive oil to prevent sticking.
7. Grill the chicken pieces for about 5-7 minutes on each side or until they get nice grill marks.
8. Transfer the chicken to a baking dish and bake in the preheated oven for about 2025 minutes or until the chicken is cooked through.
9. Baste the chicken with the remaining peri-peri sauce during baking.
10. Once cooked, remove from the oven, let it rest for a few minutes, and serve.
