:
500 grams all-purpose flour (maida)
125 grams curd (Dahi)
5 grams sugar
6 grams baking powder
5 grams baking soda
30 ml refined oil
15 grams Salt
Water, as needed
Instructions:
1. In a large mixing bowl, combine all-purpose flour, Curd (Dahi), sugar, baking powder, baking soda, oil, and salt.
2. Gradually add water and knead the ingredients into a soft and smooth dough.
3. Cover the dough with a damp cloth and let it rest for at least 2 hours.
For the Paneer Filling:
Ingredients:
250 grams crumbled paneer
1 small onion, finely chopped
1 green chili, finely chopped
5 grams garam masala
5 grams red chili powder
5 grams cumin powder
Fresh coriander leaves, chopped
15 grams Salt
Instructions:
1. In a bowl, mix together crumbled paneer, finely chopped onion, green chili, garam masala, red chili powder, cumin powder, chopped coriander leaves, and salt.
2. Ensure that the mixture is well combined and set it aside.
Assembling and Cooking:
1. Divide the rested dough into equal-sized balls.
2. Take a dough ball, flatten it, and place a portion of the paneer filling in the center.
3. Seal the edges and roll it into a ball. Flatten it gently with your palms.
4. Dust the rolling surface with flour and roll out the stuffed dough ball into a round disc.
5. Heat a tawa (griddle) or a non-stick pan on medium heat.
6. Place the rolled kulcha on the hot tawa. Cook one side until bubbles appear.
7. Flip the kulcha and cook the other side until it develops golden brown spots.
8. Optionally, you can apply ghee or butter on top for added flavor.
9. Repeat the process for the remaining dough balls.
