200g paneer, crumbled
500 grams fresh spinach (palak), blanched and finely chopped
1 large potato, boiled and mashed
1 onion, finely chopped
2 green chilies, finely chopped (adjust to taste)
15 grams ginger garlic paste
6 grams cumin powder
6 grams chaat masala
5 grams garam masala
15 grams Salt
15 grams cornflour or besan (gram flour)
Bread crumbs for coating
Oil for shallow frying
Instructions:
1. **Prepare Spinach:**
Blanch the fresh spinach in hot water for 2-3 minutes. Drain and refresh it in cold water. Squeeze out excess water and finely chop the blanched spinach.
2. **Mixing Ingredients:**
In a large mixing bowl, combine crumbled paneer, chopped spinach, mashed potato, finely chopped onion, green chilies, ginger garlic paste, cumin powder, chaat masala, garam masala, and salt.
Mix the ingredients well to form a uniform mixture.
3. **Binding Agent:**
Add cornflour or besan to the mixture. This will act as a binding agent for the kebabs. Mix well.
4. **Shape into Kebabs:**
Take a portion of the mixture and shape it into round or cylindrical kebabs. You can shape them as per your preference.
5. **Coat with Bread Crumbs:**
Roll each kebab in bread crumbs, ensuring an even coating.
6. **Shallow Fry:**
Heat oil in a pan for shallow frying.
Shallow fry the kebabs until they turn golden brown on all sides.
