Instructions:
1. **Prepare the Mutton Mixture:**
In a large bowl, combine minced mutton, chopped onions, ginger garlic paste, green chilies, fresh coriander leaves, fresh mint leaves, garam masala, red chili powder, cumin powder, coriander powder, salt, and besan (gram flour).
2. **Mix Well:**
Mix the ingredients thoroughly. You can use your hands to ensure an even mixture.
3. **Add Oil:**
Add 30 gramss of oil to the mixture and knead it again. The oil helps in keeping the kebabs moist.
4. **Marination:**
Let the mixture marinate for at least 12 hours or preferably overnight in the refrigerator. This allows the flavors to meld.
5. **Skewering:**
Take a portion of the mixture and mold it onto the skewers, shaping them into cylindrical kebabs. Ensure that the kebabs are firmly molded onto the skewers.
6. **Cooking:**
You can either grill the kebabs on a barbecue or cook them on a stovetop grill pan. Cook until the kebabs are browned and cooked through.
7. **Serve:**
Serve the Mutton Seekh Kebabs hot with mint chutney, sliced onions, and lemon wedges.
Feel free to adjust the spice levels according to your preference. Enjoy your Mutton Seekh Kebabs!
