500 grams mutton (boti pieces), cleaned and cut into bite-sized cubes
250 grams hung curd
30 gramss ginger garlic paste
10 grams red chili powder
10 grams turmeric powder
20 grams garam masala
10 grams coriander powder
10 grams cumin powder
100 grams Lemon (Neembu)
15 grams Salt
30 gramss vegetable oil
Skewers for grilling
Chopped coriander and mint for garnish
Onion rings and lemon wedges for serving
Instructions:
1. **Marination:**
In a large bowl, combine Curd (Dahi), ginger garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, lemon juice, salt, and vegetable oil to make the marinade.
2. **Marinating Mutton:**
Add the mutton pieces to the marinade, ensuring they are well-coated. Cover the bowl and let it marinate for at least 4 hours or overnight in the refrigerator for the best flavor.
3. **Skewering:**
Preheat your grill or oven.
Skewer the marinated mutton pieces onto the skewers, leaving some space between each piece.
4. **Grilling:**
Grill the mutton boti kebabs on a preheated grill or in the oven at 200°C (392°F) for about 2025 minutes or until the mutton is cooked through and has a nice char on the outside. You can also use a stovetop grill pan.
