250 grams whole wheat flour (atta)
130 grams gram flour (besan)
1 medium-sized onion, finely chopped
1 medium-sized tomato, finely chopped
1 green chili, finely chopped (adjust to taste)
70 grams fresh coriander leaves, chopped
5 grams carom seeds (ajwain)
5 grams turmeric powder
5 grams red chili powder (adjust to taste)
5 grams coriander powder
Salt, to taste
Water, as needed to knead the dough
Ghee or oil, for cooking
Instructions:
1. **Prepare the Dough:**
In a large mixing bowl, combine whole wheat flour, gram flour, chopped onions, chopped tomatoes, green chili, coriander leaves, carom seeds, turmeric powder, red chili powder, coriander powder, and salt.
Gradually add water and knead the mixture into a soft and smooth dough. Let it rest for about 1520 minutes.
2. **Divide and Shape:**
Divide the dough into small lemon-sized balls. Take each ball and flatten it with your palms.
3. **Roll the Roti:**
Roll out each ball into a flat and round roti using a rolling pin. Dust the rolling surface with some flour to prevent sticking.
4. **Cook the Roti:**
Heat a griddle or tawa over medium heat.
Place the rolled roti on the hot griddle. Cook until small bubbles appear on the surface.
5. **Flip and Cook:**
Flip the roti and apply ghee or oil on the cooked side. Press gently with a spatula.
Flip again and apply ghee or oil on the other side. Cook until both sides are golden brown.
6. **Repeat:**
Repeat the process for the remaining dough balls.
7. **Serve:**
Serve Missi Roti hot with Curd (Dahi), pickle, or any side dish of your choice.
