250 grams paneer (cottage cheese), cut into cubes
250 grams hung curd
15 grams ginger garlic paste
15 grams Lahori spice mix (or a blend of red chili powder, turmeric, cumin, coriander, and garam masala)
15 grams roasted gram flour (besan)
100 grams Lemon (Neembu)
15 grams Salt
30 ml refined oil
**For Lahori Spice Mix:**
6 grams red chili powder
5 grams turmeric powder
6 grams cumin powder
6 grams coriander powder
5 grams garam masala
**For Garnish:**
Fresh coriander leaves, chopped
Lemon wedges
**For Skewering:**
Skewers (wooden or metal), soaked in water if using wooden skewers
Instructions:
**1. Prepare the Lahori Spice Mix:**
In a bowl, mix together red chili powder, turmeric powder, cumin powder, coriander powder, and garam masala. This will be used for marination.
**2. Marinate the Paneer:**
In a large bowl, combine Curd (Dahi), ginger garlic paste, Lahori spice mix, roasted gram flour, lemon juice, salt, and oil.
Add paneer cubes to the marinade and coat them well. Let it marinate for at least 2 hours or overnight in the refrigerator.
**3. Skewering:**
Preheat the grill or oven to a high temperature.
Thread the marinated paneer cubes onto skewers.
**4. Grilling/Oven Cooking:**
Grill the skewers in the preheated grill or oven until the paneer is cooked and has a nice char on the edges. You can baste the paneer with oil or ghee during grilling for added flavor.
**5. Garnish:**
Remove the skewers from the grill or oven and place them on a serving plate.
Garnish the Lahori Paneer Tikka with chopped fresh coriander leaves and serve with lemon wedges.
