**For the Kulcha Dough:**
500 grams all-purpose flour
6 grams baking powder
5 grams baking soda
4 grams salt
30 gramss Curd (Dahi)
15 ml refined oil
Warm water (as needed)
**For the Keema Filling:**
250 grams minced meat (keema), preferably mutton or lamb
1 large onion, finely chopped
15 grams ginger garlic paste
1 green chili, finely chopped
6 grams cumin powder
6 grams coriander powder
5 grams turmeric powder
6 grams red chili powder (adjust to taste)
15 grams Salt
Fresh coriander leaves, chopped (for garnish)
**For Cooking:**
Ghee or butter for brushing
Instructions:
**1. Prepare the Kulcha Dough:**
In a mixing bowl, combine all-purpose flour, baking powder, baking soda, and salt.
Add Curd (Dahi) and oil to the dry ingredients. Mix well.
Gradually add warm water and knead the dough until it is smooth and elastic. Cover and let it rest for at least 12 hours.
**2. Prepare the Keema Filling:**
In a pan, heat oil and sauté chopped onions until golden brown.
Add ginger garlic paste and green chili. Sauté until the raw smell disappears.
Add minced meat (keema) and cook until it's browned.
Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook until the keema is fully cooked.
Garnish with fresh coriander leaves. Allow the keema mixture to cool.
**3. Assemble the Keema Kulcha:**
Take a portion of the kulcha dough and roll it into a ball.
Flatten the ball and place a spoonful of the cooled keema filling in the center.
Enclose the stuffing by bringing the edges of the dough together, ensuring it is sealed well.
Roll out the stuffed dough into a kulcha shape.
**4. Cook the Keema Kulcha:**
Preheat a tawa (griddle) or a skillet.
Place the rolled kulcha on the hot surface and cook until it puffs up and the bottom is golden brown.
Flip and cook the other side. Optionally, you can apply ghee or butter during cooking.

Brush the cooked Keema Kulcha with ghee or butter.
