For Marination:
500 grams boneless chicken, cut into cubes
250 grams fresh coriander leaves (cilantro)
130 grams fresh mint leaves
130 grams hung curd
15 grams ginger garlic paste
2 green chilies, chopped
6 grams cumin powder
6 grams coriander powder
5 grams garam masala
15 grams Salt
100 grams Lemon (Neembu)
30 gramss vegetable oil
Other Ingredients:
Skewers, soaked in water if using wooden skewers
15 grams vegetable oil for basting
Instructions:
1. **Prepare the Marinade:**
In a blender or food processor, combine fresh coriander leaves, mint leaves, Curd (Dahi), ginger garlic paste, chopped green chilies, cumin powder, coriander powder, garam masala, salt, lemon juice, and vegetable oil. Blend until you get a smooth and vibrant green paste.
2. **Marinate the Chicken:**
Place the chicken cubes in a bowl and coat them thoroughly with the prepared green marinade. Ensure that each piece is well coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or preferably overnight.
3. **Skewering:**
Preheat your grill or oven to medium-high heat.
Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece.
4. **Grilling/Baking:**
Grill the skewers on the preheated grill or bake in the oven until the chicken is cooked through and has a nice char on the edges. Baste the kebabs with vegetable oil while grilling for added moisture and flavor.
5. **Serve:**
Once the Hariyali Chicken Kebabs are cooked, remove them from the grill or oven.
Serve the kebabs hot with mint chutney and lemon wedges.
