: For Boiled Eggs: 4 eggs, boiled and peeled Salt and pepper to taste 5 grams red chili powder (optional) 5 grams garam masala (optional) For Rice: 250 grams basmati rice, soaked for 30 minutes and drained 1 Kg water for boiling rice 15 grams Salt 1 bay leaf 2-3 green cardamom pods 2-3 cloves 1-inch cinnamon stick For Biryani Masala: 30 gramss ghee (clarified butter) or oil 1 large onion, thinly sliced 15 grams ginger garlic paste 2 tomatoes, chopped 130 grams plain Curd (Dahi) 5 grams turmeric powder 6 grams red chili powder 6 grams Biryani masala (optional) 15 grams Salt Fresh coriander and mint leaves for garnish Instructions: **1. Boil Eggs:** 1. Boil eggs, peel them, and make slits on them. Sprinkle salt, pepper, and garam masala. Set aside. **2. Cook Rice:** 1. In a large pot, bring water to a boil. Add soaked and drained basmati rice. 2. Add salt, bay leaf, cardamom pods, cloves, and cinnamon stick. Boil until the rice is 70-80% cooked. 3. Drain the rice and set aside. **3. Prepare Biryani Masala:** 1. In a pan, heat ghee or oil. Add sliced onions and sauté until golden brown. 2. Add ginger garlic paste and sauté for a minute until the raw smell disappears. 3. Add chopped tomatoes and cook until they become soft. 4. Add Curd (Dahi), turmeric powder, red chili powder, Biryani masala (if using), and salt. Cook until the masala is well-cooked and oil starts to separate. **4. Assemble Egg Dum Biryani:** 1. In a heavy-bottomed pan, spread a layer of partially cooked rice. 2. Place the boiled and seasoned eggs on the rice. 3. Pour the prepared Biryani masala over the eggs. 4. Top it with the remaining partially cooked rice. 5. Garnish with fresh coriander and mint leaves. **5. Dum Cooking:** 1. Cover the pan with a tight-fitting lid or seal with aluminum foil. 2. Cook on low heat for about 1520 minutes to allow the flavors to meld and the rice to cook completely. **6. Serve:** 1. Gently fluff the rice with a fork. 2. Serve Egg Dum Biryani hot with raita or a side salad. Enjoy the rich and aromatic flavors of Egg Dum Biryani!
