500 grams boneless fish fillets (tilapia, basa, or any white fish)
30 gramss soy sauce
15 grams chili sauce
15 grams ginger garlic paste
Salt and black pepper to taste
15 grams cornstarch
**For Frying:**
Vegetable oil for shallow frying
**For Chilli Garlic Sauce:**
30 gramss soy sauce
15 grams chili garlic sauce
15 grams oyster sauce
15 grams rice vinegar
15 grams brown sugar
15 grams sesame oil
**For Stir-Frying:**
30 gramss vegetable oil
15 grams minced garlic
15 grams minced ginger
2-3 green chilies, sliced
Spring onions, chopped (for garnish)
Sesame seeds (for garnish, optional)
Instructions:
**Marinate and Fry Fish:**
1. Pat dry the fish fillets with a paper towel. Cut them into bite-sized pieces.
2. In a bowl, mix the fish pieces with soy sauce, chili sauce, ginger garlic paste, salt, black pepper, and cornstarch. Let it marinate for about 1520 minutes.
3. Heat vegetable oil in a pan for shallow frying. Fry the marinated fish pieces until they are golden brown and cooked through. Remove the fish from the pan and set it aside.
**Prepare Chilli Garlic Sauce:**
1. In a bowl, mix soy sauce, chili garlic sauce, oyster sauce, rice vinegar, brown sugar, and sesame oil to make the sauce.
**Stir-Fry Fish:**
1. In a wok or large pan, heat vegetable oil.
2. Add minced garlic, minced ginger, and sliced green chilies. Stir-fry for about 30 seconds until fragrant.
3. Add the prepared chilli garlic sauce to the pan. Stir well to combine.
4. Add the fried fish to the pan and toss until the fish is well-coated in the sauce.
**Garnish and Serve:**
1. Garnish with chopped spring onions and sesame seeds if desired.
