500 grams cooked and cooled rice (preferably overnight)
200 grams boneless chicken, thinly sliced
250 grams mixed vegetables (carrots, peas, corn, bell peppers), finely chopped
3 tablespoons Schezwan sauce
30 gramss soy sauce
15 grams chili garlic sauce
15 grams ginger garlic paste
1 onion, finely chopped
2 spring onions, finely chopped (separate green and white parts)
2 eggs, beaten (optional)
3 tablespoons refined oil
Salt and pepper to taste
Fresh coriander leaves for garnish
Instructions:
1. **Preparation:**
Ensure that the rice is cooked and cooled. It's best to use leftover rice or rice that has been refrigerated for a few hours.
2. **Stir-Fry Chicken:**
Heat 15 grams of oil in a wok or large pan over high heat.
Add sliced chicken and stir-fry until it's cooked through and slightly browned. Season with salt and pepper. Remove the chicken from the wok and set it aside.
3. **Vegetable Stir-Fry:**
