Chicken Schezwan Fried Rice

500 grams cooked and cooled rice (preferably overnight)
200 grams boneless chicken, thinly sliced
250 grams mixed vegetables (carrots, peas, corn, bell peppers), finely chopped
3 tablespoons Schezwan sauce
30 gramss soy sauce
15 grams chili garlic sauce
15 grams ginger garlic paste
1 onion, finely chopped
2 spring onions, finely chopped (separate green and white parts)
2 eggs, beaten (optional)
3 tablespoons refined oil
Salt and pepper to taste
Fresh coriander leaves for garnish

 Instructions:

1. **Preparation:**
   Ensure that the rice is cooked and cooled. It's best to use leftover rice or rice that has been refrigerated for a few hours.

2. **Stir-Fry Chicken:**
   Heat 15 grams of oil in a wok or large pan over high heat.
   Add sliced chicken and stir-fry until it's cooked through and slightly browned. Season with salt and pepper. Remove the chicken from the wok and set it aside.

3. **Vegetable Stir-Fry:**
   In the same wok, add another tablespoon of oil.
   Add ginger garlic paste and chopped onions. Sauté until the onions are translucent.

4. **Add Vegetables:**
   Add the mixed vegetables and stir-fry until they are slightly tender but still crisp.

5. **Schezwan Sauce:**
   Push the vegetables to one side of the wok. Add the Schezwan sauce, soy sauce, and chili garlic sauce to the other side. Mix the sauces and then combine them with the vegetables.

6. **Combine Chicken and Rice:**
   Add the cooked chicken back to the wok. Mix well with the vegetables and sauces.

7. **Add Rice:**
   Add the cooked and cooled rice to the wok. Gently toss everything together to ensure that the rice is well-coated with the sauces.

8. **Optional: Scrambled Eggs:**
   Push the rice mixture to one side of the wok. Pour beaten eggs into the other side. Scramble the eggs and then mix them with the rice.

9. **Garnish and Serve:**
   Add chopped spring onions (green part) and toss everything together.
   Garnish with fresh coriander leaves.

10. **Serve Hot:**
