**For Marinating Chicken:**
500 grams chicken, curry-cut
250 grams curd (Dahi)
15 grams ginger garlic paste
10 grams turmeric powder
6 grams red chili powder
15 grams Salt
**For Lababdaar Gravy:**
30 ml refined oil
15 grams ghee (clarified butter)
2 large onions, finely chopped
250 grams tomato puree
15 grams tomato ketchup
15 grams cashew nuts, soaked in water
15 grams melon seeds, soaked in water
15 grams poppy seeds (khus khus), soaked in water
15 grams ginger garlic paste
6 grams cumin seeds
6 grams coriander powder
6 grams garam masala
5 grams turmeric powder
5 grams red chili powder
5 grams kasuri methi (dried fenugreek leaves)
130 grams fresh cream
15 grams Salt
Fresh coriander leaves for garnish
Instructions:
**Marinate Chicken:**
1. In a bowl, mix chicken with Curd (Dahi), ginger garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
**Prepare Lababdaar Gravy:**
1. In a blender, grind soaked cashew nuts, melon seeds, and poppy seeds into a smooth paste.
2. Heat oil and ghee in a pan. Add cumin seeds and let them splutter.
3. Add finely chopped onions and sauté until golden brown.
4. Add ginger garlic paste and sauté for a minute until the raw smell disappears.
5. Add tomato puree and cook until the oil separates.
6. Add the ground paste of cashew nuts, melon seeds, and poppy seeds. Mix well and cook for a few minutes.
7. Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix and cook until the masala is well-cooked and the oil starts to separate.
8. Add tomato ketchup and kasuri methi. Mix well.
9. Add the marinated chicken and cook until it's browned.
10. Pour in fresh cream and stir well. Let it simmer until the chicken is fully cooked and the gravy reaches the desired consistency.
11. Garnish with fresh coriander leaves.
12. Serve Chicken Lababdaar hot with naan, roti, or steamed rice.
Note:
Adjust the spice levels according to your preference.
You can add more or less cream depending on how rich you want the gravy.
