:
**For Chicken Kadhai:**
500 grams chicken, curry-cut
30 ml refined oil
30 gramss ghee (clarified butter)
2 large onions, finely sliced
2 tomatoes, finely chopped
15 grams ginger garlic paste
2 green chilies, slit
1 bell pepper, thinly sliced
250 grams mixed bell peppers, julienned
10 grams coriander powder
6 grams cumin powder
10 grams turmeric powder
6 grams red chili powder (adjust to taste)
6 grams garam masala
15 grams dried fenugreek leaves (kasuri methi)
Fresh coriander leaves for garnish
15 grams Salt
**For Naans:**
500 grams all-purpose flour
6 grams baking powder
5 grams baking soda
125 grams curd (Dahi)
15 ml refined oil
5 grams sugar
Water (as needed)
Butter for brushing (optional)
Instructions:
**For Chicken Kadhai:**
1. **Sauté Onions:**
Heat oil and ghee in a kadhai or deep pan. Add finely sliced onions and sauté until golden brown.
2. **Add ginger garlic Paste:**
Add ginger garlic paste and sauté for a minute until the raw smell disappears.
3. **Add Tomatoes:**
Add finely chopped tomatoes and cook until they turn soft and the oil starts to separate.
4. **Add Chicken:**
Add chicken pieces to the kadhai. Cook until the chicken is browned.
5. **Spice it Up:**
Add coriander powder, cumin powder, turmeric powder, red chili powder, and garam masala. Mix well.
6. **Add Vegetables:**
Throw in slit green chilies, thinly sliced bell pepper, and julienned mixed bell peppers. Cook until the vegetables are slightly tender but still crisp.
7. **Finish with Kasuri Methi:**
Crush dried fenugreek leaves (kasuri methi) between your palms and add them to the kadhai. Mix well.
8. **Garnish and Serve:**
Garnish with fresh coriander leaves.
Chicken Kadhai is ready to be served.
**For Naans:**
1. **Prepare the Dough:**
In a bowl, mix all-purpose flour, baking powder, baking soda, sugar, Curd (Dahi), and oil.
Gradually add water and knead to form a soft dough. Cover and let it rest for 2 hours.
2. **Roll and Cook:**
Divide the dough into small balls. Roll each ball into a flat disc.
Cook on a hot griddle or tawa until bubbles form, then flip and cook the other side.
3. **Brush with Butter (Optional):**
Brush the naans with butter for added flavor (optional).
4. **Serve:**
Serve Chicken Kadhai Kick hot with freshly made naans.
Note:
Adjust the spice levels in both the Chicken Kadhai and naans according to your preference.
You can add a splash of cream to the Chicken Kadhai for extra richness.
