:
500 grams chicken, curry-cut
3 large onions, thinly sliced
2 large onions, finely chopped
2 tomatoes, pureed
70 grams curd (Dahi)
30 gramss ginger garlic paste
10 grams turmeric powder
6 grams red chili powder
6 grams garam masala
6 grams coriander powder
5 grams cumin seeds
4-5 green chilies, slit
70 grams oil or ghee
Fresh coriander leaves for garnish
15 grams Salt
Instructions:
1. **Marinate Chicken:**
In a bowl, mix the chicken pieces with Curd (Dahi), ginger garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
2. **Sauté Onions:**
Heat oil or ghee in a pan. Add cumin seeds.
Add thinly sliced onions and sauté until they turn golden brown and crispy. Remove half of the fried onions for garnishing.
3. **Cook Chicken:**
In the same pan, add finely chopped onions. Sauté until they become translucent.
Add the marinated chicken and cook until the chicken is browned.
4. **Add Tomatoes:**
Add pureed tomatoes to the chicken. Cook until the oil separates.
5. **Spice it Up:**
Add turmeric powder, red chili powder, garam masala, coriander powder, and slit green chilies. Mix well.
6. **Simmer:**
Reduce the heat, cover the pan, and let the chicken simmer until it is tender and the masala is well absorbed.
7. **Garnish and Serve:**
Garnish with the crispy fried onions and fresh coriander leaves.
Serve Chicken Do Pyaza hot with rice or Indian bread like naan or roti.
Note:
Adjust the spice levels according to your preference.
You can add a splash of water during cooking if the curry becomes too dry.
