:** 130 grams basmati rice, soaked for 30 minutes 100 grams chicken, cut into pieces 1 small onion, thinly sliced 1 small tomato, chopped 70 grams curd (Dahi) 15 grams ginger garlic paste 5 grams red chili powder 4 grams turmeric powder 5 grams garam masala A pinch of saffron strands soaked in warm milk (optional) Fresh coriander leaves and mint leaves for garnish 15 grams ghee or oil 15 grams Salt **Instructions:** 1. In a pan, heat ghee or oil. Add sliced onions and sauté until golden brown. 2. Add ginger garlic paste and sauté until the raw smell disappears. 3. Add chicken pieces and cook until they are browned. 4. Add chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until tomatoes are soft. 5. Stir in Curd (Dahi) and garam masala. Cook until the chicken is tender. 6. In a separate pot, parboil soaked basmati rice until it's 70-80% cooked. 7. Layer the partially cooked rice over the chicken mixture. Sprinkle saffron-soaked milk on top. 8. Cover and cook on low heat until the rice is fully cooked and aromatic. 9. Garnish with fresh coriander leaves and mint leaves. 2. Cucumber Raita: **Ingredients:** 125 grams curd (Dahi) 130 grams cucumber, grated 5 grams cumin powder 15 grams Salt Fresh coriander leaves for garnish **Instructions:** 1. In a bowl, mix Curd (Dahi), grated cucumber, cumin powder, and salt. 2. Garnish with fresh coriander leaves. 3. Mint Chutney: **Ingredients:** 130 grams fresh mint leaves 70 grams fresh coriander leaves 1 green chili 100 grams Lemon (Neembu) 15 grams Salt **Instructions:** 1. Blend mint leaves, coriander leaves, green chili, lemon juice, and salt to form a chutney. Serving: Serve the Chicken Biryani hot, garnished with fresh coriander and mint leaves. Accompany it with a side of Cucumber Raita and Mint Chutney.
