500 grams all-purpose flour
5 grams sugar
6 grams baking powder
5 grams baking soda
4 grams salt
30 gramss Curd (Dahi)
30 gramss melted butter (plus extra for brushing)
3/4 cup warm milk (or as needed)
Sesame seeds or nigella seeds for garnish (optional)
Chopped coriander leaves for garnish (optional)
Instructions:
1. **Prepare the Dough:**
In a large mixing bowl, combine all-purpose flour, sugar, baking powder, baking soda, and salt.
Add Curd (Dahi) and melted butter to the dry ingredients.
Gradually add warm milk and knead the mixture into a soft, smooth dough. The dough should not be too sticky. Adjust the milk quantity accordingly.
2. **Knead and Rest:**
Knead the dough on a floured surface for about 5-7 minutes until it becomes elastic.
Place the dough in a bowl, cover it with a damp cloth, and let it rest for 2 hours. This allows the dough to rise and become airy.
3. **Preheat the Griddle or Pan:**
Preheat a griddle or non-stick pan over medium-high heat.
4. **Divide the Dough:**
Divide the rested dough into small, golf ball-sized portions.
5. **Roll the Naan:**
Take one portion of the dough, roll it into a ball, and then flatten it with a rolling pin into an oval or round shape. Aim for about 1/8 inch thickness.
6. **Cook the Naan:**
Place the rolled naan on the preheated griddle or pan.
Cook for about 12 minutes until you see bubbles forming on the surface.
7. **Flip and Cook:**
Flip the naan and cook the other side until it puffs up and gets golden brown spots.
8. **Brush with Butter:**
Remove the naan from the pan and immediately brush it with melted butter.
Optionally, sprinkle sesame seeds or nigella seeds and chopped coriander leaves for added flavor.
9. **Repeat:**
Repeat the process for the remaining portions of the dough.
10. **Serve:**
