For Marination:
500 grams boneless chicken, cut into cubes
250 grams hung curd
15 grams ginger garlic paste
6 grams red chili powder
10 grams turmeric powder
15 grams Salt
For Gravy:
30 gramss butter
15 ml refined oil
1 large onion, finely chopped
2 tomatoes, pureed
15 grams tomato paste (optional)
15 grams ginger garlic paste
6 grams red chili powder (adjust to taste)
10 grams turmeric powder
6 grams garam masala
6 grams ground coriander
6 grams ground cumin
130 grams cashew nuts, soaked in warm water
250 grams cream
15 grams Salt
Fresh coriander leaves, chopped (for garnish)
Instructions:
Marination:
1. In a bowl, combine chicken cubes with Curd (Dahi), ginger garlic paste, red chili powder, turmeric powder, and salt. Let it marinate for at least 2 hours or preferably overnight in the refrigerator.
Gravy:
1. Heat butter and oil in a pan over medium heat.
2. Add finely chopped onions and sauté until they become golden brown.
3. Add ginger garlic paste and sauté for a minute until the raw smell disappears.
4. Add pureed tomatoes, tomato paste (if using), red chili powder, turmeric powder, garam masala, ground coriander, and ground cumin. Cook until the oil starts to separate from the masala.
5. In a blender, grind soaked cashew nuts into a smooth paste.
6. Add the cashew paste to the tomato-based masala and mix well.
7. Add the marinated chicken along with the marinade. Cook until the chicken is fully cooked and the masala coats the chicken.
8. Stir in cream and salt. Simmer for a few minutes until the curry reaches your desired consistency.
9. Garnish with chopped fresh coriander leaves.
10. Serve Butter Chicken hot with naan, rice, or your choice of bread.
