:
500 grams mutton (goat meat), cleaned and cut into pieces
2 large onions, finely sliced
2 large tomatoes, finely chopped
125 grams curd (Dahi)
15 grams ginger garlic paste
30 gramss Andhra-style red chili powder (adjust to taste)
5 grams turmeric powder
6 grams mustard seeds
6 grams fenugreek seeds
1 sprig curry leaves
30 ml refined oil
15 grams Salt
Fresh coriander leaves for garnish
Whole Spices:
1 cinnamon stick
2-3 green cardamom pods
3-4 cloves
1 bay leaf
Dry Roasted Masala Powder:
15 grams coriander seeds
15 grams cumin seeds
15 grams black peppercorns
15 grams sesame seeds
15 grams poppy seeds
Instructions:
Dry Roasted Masala Powder:
1. Dry roast coriander seeds, cumin seeds, black peppercorns, sesame seeds, and poppy seeds until they release a fragrant aroma. Be careful not to burn them.
2. Allow the roasted spices to cool, and then grind them into a fine powder.
Gosht Curry:
1. Heat oil in a heavy-bottomed pan. Add mustard seeds, fenugreek seeds, curry leaves, and the whole spices (cinnamon stick, cardamom pods, cloves, bay leaf). Let them splutter.
2. Add sliced onions and sauté until they become golden brown.
3. Add ginger garlic paste and sauté for a minute until the raw smell disappears.
4. Add chopped tomatoes and cook until they become soft and the oil starts to separate.
5. Add Andhra-style red chili powder, turmeric powder, and the dry roasted masala powder. Mix well.
6. Add Curd (Dahi) and cook until the masala is well blended.
7. Add the cleaned and cut mutton pieces. Mix well to coat the meat with the masala.
8. Cook for a few minutes until the mutton starts to brown.
9. Add water to achieve the desired consistency for the curry.
10. Cover the pan and let the mutton cook on low heat until it becomes tender. This may take about 1.5 to 2 hours, depending on the tenderness of the meat.
11. Adjust salt and spice levels according to your taste.
12. Garnish with fresh coriander leaves.
