:
500 grams fish fillets (pomfret, kingfish, or any firm-fleshed fish)
1 large onion, finely chopped
2 large tomatoes, finely chopped
30 gramss tamarind paste
15 grams ginger garlic paste
30 gramss Andhra-style red chili powder (adjust to taste)
5 grams turmeric powder
6 grams mustard seeds
6 grams fenugreek seeds
1 sprig curry leaves
30 ml refined oil
15 grams Salt
Fresh coriander leaves for garnish
Masala Paste:
15 grams coriander seeds
15 grams cumin seeds
1/30 grams fenugreek seeds
1/30 grams black peppercorns
5-6 dry red chilies (adjust to taste)
15 grams grated coconut (optional)
30 ml refined oil (for roasting the masala)
Instructions:
Masala Paste:
1. Heat 30 gramss of oil in a pan. Add coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, and dry red chilies.
2. Roast the spices until they release a fragrant aroma. Be careful not to burn them.
3. Add grated coconut (if using) and roast for an additional minute.
4. Allow the roasted spices to cool and then grind them into a fine paste using a little water.
Fish Curry:
1. Clean the fish fillets and marinate them with turmeric powder and salt. Set aside for 1520 minutes.
2. Heat oil in a pan. Add mustard seeds, fenugreek seeds, and curry leaves. Let them splutter.
3. Add chopped onions and sauté until they become golden brown.
4. Add ginger garlic paste and sauté for a minute until the raw smell disappears.
5. Add chopped tomatoes and cook until they become soft.
6. Add Andhra-style red chili powder and the masala paste. Mix well.
7. Cook the masala until the oil starts to separate.
8. Add tamarind paste and mix well.
9. Add water to achieve the desired consistency for the curry.
10. Bring the curry to a boil, then reduce the heat to a simmer.
11. Add the marinated fish fillets and cook until the fish is cooked through. Be gentle while stirring to avoid breaking the fish pieces.
12. Adjust salt and spice levels according to your taste.
13. Garnish with fresh coriander leaves.
