500 grams chicken, cut into pieces
2 large onions, finely chopped
2 tomatoes, pureed
70 grams oil
6 grams mustard seeds
6 grams cumin seeds
6 grams fenugreek seeds
1 sprig curry leaves
30 gramss ginger garlic paste
3 tablespoons Andhra-style red chili powder (adjust to taste)
10 grams turmeric powder
10 grams coriander powder
6 grams garam masala
15 grams Salt
Fresh coriander leaves for garnish
Instructions:
1. Heat oil in a pan. Add mustard seeds, cumin seeds, fenugreek seeds, and curry leaves. Let them splutter.
2. Add chopped onions and sauté until they turn golden brown.
3. Add ginger garlic paste and sauté for a minute until the raw smell disappears.
4. Add pureed tomatoes, red chili powder, turmeric powder, coriander powder, garam masala, and salt. Cook until the oil separates.
5. Add chicken pieces and coat them well with the masala. Cook for 5-7 minutes.
6. Add a cup of water, cover, and cook until the chicken is tender and the gravy reaches your desired consistency.
7. Garnish with fresh coriander leaves.
